Pumpkin is in the air, well, at least it is at my house. You will already find my husband sipping this whole 30 pumpkin spice latte on the weekends while the kids are enjoying pumpkin granola, healthy pumpkin muffins, and healthy pumpkin pancakes, and it is still only September! 

I have all the fall diffuser blends going, and it is starting to get cooler outside. Every year, I hate to see summer go, but fall really is a magical time of year. Something about windows open and my paleo pumpkin bread in the oven can really set the mood. 

Ok, so I have to admit, I am not a coffee drinker. I always thought I would become one as an adult. Well, I’m in my 30s and still not a coffee drinker. I guess it isn’t going to happen. However, I can really get down with a pumpkin spice latte. 

I rarely drink coffee, but I’ll make a few exceptions during the fall. 😉 Especially when the latte is healthy and Whole30 friendly, like this one!

  • Almond milk: You can use almond milk or coconut milk for this recipe. I’ve tried both, and I prefer almond milk. Make sure your nondairy milk is free of added ingredients that will make it not Whole30-compliant.
  • Spices: Cinnamon and pumpkin pie spice pack this tasty latte with fall flavor!
  • Coffee: You can brew your coffee in whichever way you prefer, just make sure it’s strong. If you have an espresso machine, you can use a double shot of espresso instead of the ½ cup of brewed coffee.
  • Pumpkin puree: You can use canned or homemade pumpkin puree! If you buy canned, make sure it’s 100% pure pumpkin without sugar or other added ingredients.
  • Vanilla extract: Since this latte won’t have any sweeteners, I’ve found that the vanilla extract gives it a sweeter flavor, so don’t skip it. Don’t substitute with imitation vanilla as it usually has sugar.
  • Honey (optional): Honey is not Whole30 approved, but it is an option for those on the paleo diet or who just want to have a healthier latte!

How to Make a Pumpkin Spice Latte

Step 1. Add milk, pumpkin pie spice, and cinnamon to a small saucepan. Heat over medium heat for 3 minutes, stirring often. Then pour into a blender.

Step 2. Add the rest of the ingredients to the blender.

Step 3. Blend on high for 2 minutes.

Step 4. Pour into a coffee mug. Optionally top with coconut cream and sprinkle with pumpkin pie spice.

Best Coffee for Homemade Lattes

You will see that the recipe calls for strong brewed coffee. That is because it will be diluted with milk, spices, and pumpkin puree. You can use regular or decaf coffee. 

My husband is what I would call a “coffee snob.” He grinds whole beans every morning and only uses a French press. The guy even packs his grinder and press for weekend vacations. See what I mean? 😉 

You will need ½ cup of strongly brewed hot coffee; figure about 1.5 tbsp of ground coffee. I am using the French press, but a regular coffee pot will do too! If you have an espresso machine, a double shot of espresso will be perfect.

How to Make a Paleo Pumpkin Spice Latte

You can easily turn this into a paleo pumpkin spice latte if you are not on the Whole30 by adding a couple of tablespoons of sweetener to your pumpkin spice latte. When I am not doing the Whole30, we generally stay close to the paleo diet. That’s why you’ll often find me sipping my favorite paleo hot chocolate most evenings!

Healthy sweeteners, like honey, coconut sugar, maple syrup, and stevia, are allowed on the paleo diet. I have an option to add this to the recipe if you are not on the Whole30. It is delicious without, so the sweetener is completely optional!

Is coffee Whole30 approved?

Coffee is Whole30 approved! You can drink it black or with a compliant non-dairy milk. You can even find Whole30-approved coffee creamers at some stores! 

Which non-dairy milks can I have with Whole30?

Almond milk and coconut milk are allowed on the Whole30 diet. However, you need to check your labels! A lot of almond milk and coconut milk have added ingredients in them that will need to be avoided while on the Whole30. 

Can I sweeten this latte?

If you’re on Whole30, there is no way to sweeten this latte more than the pumpkin puree, vanilla, and cinnamon do. Whole30 doesn’t allow any type of sweeteners; even stevia is out.

If you are not doing Whole30, this latte can be sweetened with honey, maple syrup, coconut sugar, or your favorite sweetener of choice!

Whether you are doing Whole30 or simply want to eat a little healthier, I hope you enjoy this Whole30 pumpkin spice latte this season! I think this latte is proof that eating (and drinking) healthy does not have to mean giving up your favorite treats entirely.

Ingredients 

  • ½ cup strong brewed coffee, or 2 shots of espresso
  • ½ cup almond milk
  • 2 tablespoons pumpkin puree
  • 1 teaspoon pure vanilla extract
  • ¼ teaspoon pumpkin pie spice
  • ¼ teaspoon cinnamon
  • 2 tablespoons honey, If not on Whole30.

Instructions 

  • Add milk, pumpkin pie spice, and cinnamon to small saucepan. Heat over medium heat for 3 minutes stirring often. Then pour into a blender.
  • Place the rest of the ingredients into the blender.
  • Blend on high for 2 minutes.

    Would this keep in the fridge at all? If I made everything the night before, frothed it in the morning and added to hot coffee?
    I don’t want to wake everyone up in the AM with a blender
