Anytime I make potatoes, I will always throw in a few sweet potatoes as well. My kids prefer sweet potatoes, and I love that they have more nutrients. 

I have made loaded baked potatoes in the past, so I thought, why not load up a sweet potato?  Let me just tell you now that we have tried it. I don’t think we will ever go back to regular potatoes!  These are so tasty and good for you. 

My husband will be the first to admit that he had his doubts about this meal, but he changed his mind after his first bite. I hope your family loves these as much as we do.

WHOLE 30 STUFFED SWEET POTATOES 

There are so many ways you can stuff and top these. I am going to share our favorite way first; continue reading for more options. 

LET’S TALK ABOUT SWEET POTATOES Chopped cilantro, tomatoes, chicken, and a Mexican stuffed sweet potato on white ship lap.

Have you ever heard the saying, eat the rainbow?  Well, it is a good reminder to eat fruits and vegetables of all different colors. The brighter, more colorful foods typically have more nutrients in them. This is especially true when comparing sweet potatoes to white potatoes.

Here are a few benefits of eating a diet full of bright orange sweet potatoes: 

  • Sweet potatoes are loaded with nutrition, and they have fewer calories and carbs than regular white potatoes. 
  • Sweet potatoes are a starchy root vegetable that has a slightly sweet flavor.
  • They contain high amounts of fiber and potassium.  
  • Sweet potatoes have been shown to help the body maintain healthy blood pressure. 
  • Sweet potatoes are high in antioxidants, fiber, vitamin C, potassium, B vitamins, manganese, magnesium, and copper.
  • They get their orange color from beta-carotene, which is good for healthy skin, mucous membranes, our immune system, and eye vision.

OUR FAVORITE WAY IS MEXICAN STYLE! 

INGREDIENTS 

6 sweet potatoes

3 cups shredded chicken 

1 tablespoon of paleo taco seasoning 

OPTIONAL TOPPINGS 

2 Roma tomatoes, diced 

1 red onion, diced 

1 yellow bell pepper, sliced 

Fresh cilantro 

Shredded Lettuce 

2 jalapeños, diced 

2 avocados, sliced or made into guacamole 

1 key lime or lime essential oil 

Hot sauce 

Salsa 

Sour cream (If not doing whole 30.) 

Shredded cheese (If not doing whole 30.) 

INSTRUCTIONS 

  1. Bake the sweet potatoes in a 400-degree oven for 45 minutes or until soft. 
  2. While the potatoes are baking, start preparing the toppings. 
  3. I baked a pound of chicken in the oven at the same time as my potatoes. You can boil or pan fry the chicken too. 
  4. Once Chicken is fully cooked, shred with a fork. For extra flavor, sprinkle the chicken with taco seasoning and the juice from a key lime.  Get my paleo taco seasoning recipe below. 
  5. When the sweet potatoes are finished baking, slice in half, and mash slightly with a fork. 
  6. Top it with chicken and desired toppings from the list above. 
  7. Enjoy! 

EASY PALEO TACO SEASONING RECIPE Mexican food on white table.

With a few spices in your pantry, you can whip up a taco seasoning that is healthy. I try to avoid taco seasonings because most of them have gluten, MSG, artificial dyes, and some form of sugar.  Try mixing up a batch of this for the next time you are enjoying any Mexican flavored dish. 

INGREDIENTS

1 tablespoon chili powder 

1 teaspoon cumin 

1/2 tablespoon salt (I use pink Himalayan.) 

1 teaspoon black pepper 

1 teaspoon garlic powder 

1/2 teaspoon onion powder 

1/2 teaspoon cinnamon 

1/4 teaspoon paprika 

1/4 teaspoon red hot pepper flakes 

INSTRUCTIONS 

  1. Add all the ingredients to a small bowl and stir until well combined. 
  2. Store in an airtight container.  

We store ours in a small mason jar. I like to make a large batch of this while I have all the spices out. 

MORE OPTIONS FOR STUFFED SWEET POTATOES

SOUTHWESTERN STUFFED SWEET POTATOES 

Follow the same instructions as above, but try topping your sweet potatoes with these toppings to change up the flavor: 

  • 6 sweet potatoes
  • 3 cups ground beef, browned  
  • 1 tsp salt 
  • 1 tsp black pepper 
  • 1/2 tsp cumin 
  • 1 cup black beans, cooked 
  • 1 cup corn, cooked 
  • 1/2 cup tomato, diced 
  • 1 key lime or lime essential oil 
  • Avocado, diced 
  • Shredded corn chips 
  • Shredded lettuce 
  • Sour cream 
  • Shredded cheese 

CHEESEBURGER STUFFED SWEET POTATOES 

Follow the same instructions as above, but try topping your sweet potatoes with these toppings to change up the flavor: 

  • 6 sweet potatoes
  • 3 cups ground beef, browned  
  • 1 tsp salt 
  • 1 tsp black pepper 
  • 1/2 cup tomato, diced 
  • Bacon crumbles 
  • Avocado, diced 
  • Shredded lettuce 
  • Shredded cheese

PULLED PORK STUFFED SWEET POTATOES 

Follow the same instructions as above, but try topping your sweet potatoes with these toppings to change up the flavor: 

  • 6 sweet potatoes
  • 3 cups pulled pork 
  • 1 red onion, diced 
  • Reb cabbage, sliced 
  • Barbecue sauce, drizzle on top 
  • Sour cream 
  • Shredded cheese 

As you can see, the possibilities are endless!  You can even make this for breakfast or for dessert. Mashed sweet potato with cinnamon, chopped almonds and bananas on top.

One night while we were eating Mexican stuffed sweet potatoes, my husband was dreaming up a dessert-style for this recipe.  

Check out a few of these ideas: 

Top your sweet potato with sautéed apples, cinnamon, butter, and honey. This is a real treat! 

Or try banana slices, sliced almonds, a scoop of almond butter, and sprinkle with cinnamon. My kids love to have this for a snack.
