These peppermint pale brownies have become a favorite dessert in our house. They are moist, fudgy, and delicious! Grain-free, gluten-free, dairy-free, and refined sugar-free dessert.
I wouldn’t mind having a healthy baked good sitting on my counter at all times, and neither would my family. Now with 4 kids, this isn’t reality, but a girl can dream, right?
These peppermint paleo brownies are my go-to dessert because they are so easy to make. I’ll be the first to admit that I don’t like baking, and I am not one to follow recipes. This recipe only has a few ingredients and one dish, WIN-WIN!
PEPPERMINT PALEO BROWNIES VIDEO TUTORIAL

Preheat oven to 350 degrees and grease a 9 by 9 pan with coconut oil.
Add all of the ingredients to a medium-size mixing bowl.
Mix together with a fork or a handheld mixer until all the ingredients are well combined.
Pour into a prepared baking dish and bake for 20 minutes.
These homemade paleo brownies are perfect for birthday parties, dessert, or just a quiet evening at home. With the small chance these brownies are not entirely consumed in one sitting, keep covered and they will last up to 4 days.
ABOUT THE INGREDIENTS
COCONUT FLOUR
Be prepared to use a ton of eggs if you are baking with coconut flour. It is a dense flour, and it requires a lot of liquid to get a delicious dish. Baking with coconut flour can be tricky at first, but once you get it down, you will love it.
Coconut flour is high in fiber, protein, and healthy fats. It is free from wheat and gluten, making it a good option for anyone that has a gluten intolerance. It is low in sugar, carbohydrates and has a low score on the glycemic index.
COCONUT OIL
Coconut oil has been in the spotlight lately, and I don’t see it going anywhere, anytime soon! We buy coconut oil by the gallon (or should I say gallons) because I use it for everything. It is my number 1 oil for cooking, especially because I mainly cook dairy-free, and I use it in a lot of my natural homemade personal products.
Coconut oil is a heart-healthy food loaded with vitamins and nutrition that can benefit your body. It is anti-bacterial, anti-viral, anti-fungal, and anti-inflammatory. Adding it to your diet can be very beneficial!
HONEY
If you have watched any of my cooking videos on youtube, you know that we buy honey by the gallon. We live close to an Amish community, and they sell raw honey. It is to die for, so when I go, I stock up. I love being able to sweeten all of our desserts with local raw honey.
High-quality honey is a good source of antioxidants. It is loaded with minerals, such as calcium, copper, iron, magnesium, manganese, phosphorus, potassium, and zinc.
PEPPERMINT ESSENTIAL OIL
Adding the peppermint essential oil can be optional if you aren’t a mint chocolate fan. But if you are anything like me, you won’t want to leave this vital ingredient out! Peppermint essential oil is very concentrated, so be sure not to overdo it! I say 1-3 drops in the recipe because it really depends on preference; start with less and add more if needed.
WARNING: Do not add peppermint if you are nursing because peppermint essential oil can decrease milk supply.
