My family loves anything with sausage, whether on a sourdough pizza or in a breakfast casserole. The best thing about this skillet is that it is so easy and can be whipped up in less than 30-minutes.

This sausage and potato skillet will quickly become a family favorite, and it will please any crowd. I have made this meal at the beginning of the week for packed lunches.

SAUSAGE AND POTATO SKILLET ONE-POT MEAL

My favorite thing about this easy dinner is that it only requires one pot or skillet to make. It is also a well-balanced meal. With meat, potatoes, and vegetables, it is filling and full of nutrition.

It can be made up in less than 30-minutes and requires little cleanup. That is a win-win for this mama!

I make mine in a cast-iron skillet, but any skillet will do if you don’t have one.

HOW TO MAKE SAUSAGE AND POTATO SKILLET

  1. Start off by dicing up red and yellow new potatoes.
  2. Preheat a cast-iron skillet and add in coconut oil. Add in potatoes.
  3. While the potatoes cook, dice up the polish sausage, red bell peppers, and onions.
  4. Once the potatoes start to soften, add in the sausage and vegetables. Leave on heat until vegetables and sausage are fully cooked.
  5. Serve or store in an airtight container for later.

SAUSAGE AND POTATO GRAVY

When I made this, we served it over dirty rice and I made a delicious and healthy sauce to drizzle over the top. It is optional as the dish tastes great on its own too!

You will need chicken stock or bone broth, hot sauce, dijon mustard, and arrowroot powder for the sauce.

  1. Add one cup of bone broth to a small skillet over medium heat.
  2. Add in 1 tablespoon of hot sauce and 1 teaspoon of dijon mustard. Stir well. You can adjust the hot sauce depending on how spicy you like it.
  3. Sprinkle in about 1 tablespoon of arrowroot powder and stir until the sauce thickens.
  4. Remove from the heat and drizzle over the sausage and potatoes.

OTHER VEGETABLES YOU CAN USE

This sausage skillet can be customized and switched up to make a different style of meal every time you make it. You may have to adjust the cooking time depending on which vegetable you add-in, but the rest of the recipe will be the same.

Some other vegetables you can add in:

  • Green beans
  • Asparagus
  • Brussel sprouts
  • Yellow or green peppers
  • Red onions
  • Carrots
  • Corn
  • Zucchini

WHAT GOES WITH SAUSAGE AND PEPPERS?

This skillet makes a complete meal on its own or can be served with brown rice, dirty rice, or cauliflower rice. We serve it with dirty rice and the spicy sauce drizzled over the top. For my large family of 7, it is my goal to stretch every meal and rice is a great way to do that!

To make dirty rice, just add lots of spices, onions, celery, and garlic.

CAN I USE THIS SAUSAGE SKILLET FOR MEAL PREP?

Yes! This recipe makes a great meal prep meal. You can make a double batch at the beginning of the week and separate it into airtight containers for lunches throughout the week.

If you plan to serve it with the sauce, I suggest storing that separately and pouring it over the meal before serving to keep it from getting soggy. Other than that, this meal holds up well for meal prepping.

FAQ AND TIPS

  • This meal will store in the fridge for up to 5 days or in the freezer for 6 months.
  • If using cast-iron, preheat the skillet before adding in the potatoes to avoid sticking.
  • Read the label on the polish sausage to avoid getting sausage with unhealthy ingredients. I have found several brands with clean ingredients at local health food stores.
  • You can substitute the new potatoes for russet, red, or yellow potatoes.
  • Any vegetable oil will work for cooking. I prefer coconut oil or avocado oil as they have a high smoke point.

Ingredients 

  • 1 pound new potatoes, mixture of yellow and red
  • 1 pound polish sausage
  • 1 bell pepper, red
  • 1 onion
  • Coconut oil, for cooking

  • Begin by dicing up potatoes.
  • Preheat a cast-iron skillet, add in coconut oil.
  • Add in potatoes.

    Do you put the potatoes in the skillet raw?
    Mine take an hour to cook that way. What am I missing?
