Cozy up with this delicious paleo peppermint hot chocolate on a cold night.
Ingredients
1cupunsweetened almond milk
1tbspcoconut sugar
1tbspcocoa powder
⅛tspvanilla extract
⅛tsppeppermint extract, or to taste
Prevent your screen from going dark
Instructions
Add all ingredients to a medium-size saucepan and whisk well. Heat over low to medium heat, stirring often.
When desired temperature is met, remove from the heat.
Pour into a mug and serve hot.

You can top your hot cocoa with whipped coconut milk for an extra special treat! Chill a can of full-fat coconut milk overnight, then whip the hardened cream with a hand mixer until fluffy. Feel free to add a little maple syrup to sweeten it.
Make sure to stir your hot chocolate well so you don't find any clumps of cocoa powder in it.
Making your own nut milk is a great option when you're avoiding certain ingredients! I've made my own almond milk in the past and it is delicious.
If you can't find coconut sugar, you can add maple syrup to your hot cocoa instead.
