Instructions
CHIPOTLE RANCH DRESSING
Add all the ingredients to a small mixing bowl.
Mix until everything is well combined.
Set aside.
SOUTHWEST CHICKEN
Heat a cast-iron skillet over medium heat and add in 1 tablespoon of avocado oil.
While the skillet is heating, cut the chicken tenders into one-inch strips.
Mix the chipotle spices in a large bowl. Add the chicken to the spices and toss to coat.
Place the chicken in the cast iron skillet and cook until done, stirring often. About 10 minutes.
SOUTHWEST CHICKEN SALAD
Place lettuce on a plate
Top with southwest chicken, avocado slices, and french fries.
Sprinkle with cheese and drizzle with homemade southwest dressing.
Garnish with fresh cilantro and fresh lime juice.
