This easy beef casserole with potatoes makes the perfect weeknight dinner and is so delicious.
Equipment
9x13 baking dish
Ingredients
6medium-sized potatoes, peeled and thinly sliced
2tablespoonsbutter
1poundground beef
1onion, peeled and diced
4garlic cloves, peeled and minced
2carrots, peeled and shredded
1can of corn or one bag of frozen corn
1-8ouncebag shredded cheddar cheese
¼cupheavy whipping cream
Salt and Pepper to taste

Instructions
Preheat oven to 375 degrees.
Add ground beef, onions, garlic, and carrots to a large skillet. Cook until meat is browned and vegetables are sauteed. Sprinkle with salt and pepper to taste.
Peel potatoes and slice into thin circles. Line the bottom of a 9 by 13 pan with half of them.
Dot the potatoes with butter and sprinkle with salt and pepper.
Pour the beef and vegetable mixture over top of the potatoes. Using a spatula, spread evenly over the pan.
Pour corn over top of the meat.
Arrange another layer of potatoes over top of the corn.
Dot the potatoes with butter and sprinkle cheese evenly overtop the casserole dish.
Pour the heavy whipping cream over top of the casserole.
Bake at 375 degrees for 30 minutes or until potatoes are soft.
