Whole30 Chili

Ingredients
 

  • 1 lb ground beef
  • 1 large green pepper diced
  • 1 onion diced
  • 3 carrots peeled and diced
  • 1 small zucchini peeled and diced
  • 4 tomatoes diced
  • 1 cup tomato sauce
  • 1 4- oz can diced green chilies
  • 1 jalapeno diced (optional)
  • 2 tbsp avocado oil
  • 1 tbsp chili powder
  • ½ tbsp cumin
  • ½ tbsp garlic powder
  • ½ tbsp onion powder
  • ½ tbsp paprika
  • 1 tsp salt
  • 2 garlic cloves minced

Instructions
 

  • 1. Heat the oil in a large saucepan over medium heat. Saute peppers, onions, garlic, carrots, and zucchini for 3-5 minutes.
    2. Add in the ground beef and cook until no longer pink.
    3. Add in the spices, green chilies, tomatoes, and tomato sauce. Bring to boil. Boil for 5 minutes then reduce heat to low and simmer for 40 minutes or until vegetables are soft.
