Healthy Easter Morning Sweet Potato Breakfast Casserole

Ingredients
 

  • 1 pound ground sausage
  • 4 sweet potatoes
  • 1 green pepper diced
  • 1 onion diced
  • 2 large handfuls spinach
  • 1 tbsp coconut oil for cooking
  • Salt and Pepper to taste
  • 1 tsp rosemary

Instructions
 

  • Add the coconut oil to a large skillet and add in diced green peppers and onions. Sauté for 5 minutes and then add in breakfast sausage. Continue to cook until the sausage is browned.
  • While the meat is cooking slice the sweet potatoes into 1/2 inch thick circles and line them into a prepared 9 by 13 baking dish. Sprinkle with salt and pepper. 
  • Add the spinach on top of the sweet potatoes and then pour the sausage and veggies over top of the spinach and potatoes. 
  •  Whisk the 12 eggs, rosemary, salt, and pepper together in a large bowl and then pour over top of the veggies and meat. 
  • Cover dish and stick it in the refrigerator over night. Or if you aren't making ahead of time you can bake it right away. I have done it both ways and either way is delicious.
  • In the morning bake it in a 375 degree oven for 45 minutes or until the eggs are set.
